Top it off with a pair of simple fruit sauces: one made from orange juice and a little marmalade, and the other from blackberries or blueberries – whatever is in season.
Cinnamon Raisin Stuffed French Toast
inspired by the Mango Inn Bed & Breakfast, Lake Worth
Serves 2-4
- 4 pieces of cinnamon raisin bread*
- 4 tbs light cream cheese
- 1 egg, beaten
- 1/2 cup almond milk
- 1 1/2 tbs sugar
- 1/8 tsp vanilla
- Dash of salt
- 1/4 tsp cinnamon
- Butter or coconut oil for cooking
Blueberry Sauce
- 1 cup blueberries, fresh or frozen
- 1/2 tbs cornstarch
- 1/4 tsp fresh lemon juice
- 1 tbs sugar
Combine the lemon juice and cornstarch while cold until dissolved. Set aside. Heat sugar and blueberries in a small sauce pan over medium low heat. Once the blueberries start to release their juices, stir in the lemon juice mixture. Heat until thickened, and cornstarch is no longer cloudy. Keep warm on very low heat, stirring occasionally.
Orange Sauce
- 1 cup of fresh orange juice
- 1/2 tsp sugar or 1 tbs marmalade
- 1/2 tbs cornstarch
Combine all ingredients in a saucepan and simmer until thickened. Keep warm to serve.
French Toast Directions:
Combine egg, milk, sugar, vanilla, salt, and cinnamon in a shallow bowl, and whisk together. Spread each piece of bread with cream cheese, and fold into triangles. Dip into egg mixture, coating well. Set aside.
Heat griddle or frying pan on medium high heat, melt butter or coconut oil, swirling around to coat. Fry french toast triangles until golden brown on all sides.
Plate, and serve with blueberry and orange sauces. Maple syrup optional.

For the loaf:
- 1 cup sourdough starter
- 4 tablespoons butter, melted and cooled
- 1 1/2 teaspoons salt
- 3 cups bread flour
- 3/4 cup coconut milk (or regular milk)
- 4 tablespoons coconut sugar
- 1 teaspoon cinnamon
- 1 egg, beaten
- 1 cup raisins
For the swirl:
- 2-3 tablespoons coconut sugar
- 3 tablespoons butter, melted and cooled
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
