Double Chocolate Chili Cake
Ingredients:
Kenny & Zuke’s Double Chocolate Chili Cake:
- 1 C butter, melted
- ½ C cocoa powder
- 1 ¾ C granulated sugar
- 1 C sour cream
- 1 Tbsp. vanilla
- 2 eggs
- ¼ C bittersweet chocolate, shaved or chips pulsed in a food processor
- 2 C flour
- 1 tsp. baking soda
- ¾ tsp. salt
- 2 tsp. chili powder
- ½ tsp. cayenne
Preheat the oven to 350 F. Prepare (grease) one 9 in Bundt pan or split into individual cake pans.
Melt the butter in a small saucepan. Measure the cocoa into a large bowl. Mix in the butter. Then add sugar, sour cream, vanilla, and eggs and mix. Mix in chocolate. Add in remaining ingredients and mix until just combined. Pour into prepared pan(s). Bake 25-35 min or until a toothpick comes out clean. Cool in the pans. Turn onto a rack and cool fully.
Chocolate Glaze Topping:
- 2/3 C bittersweet chocolate
- 1/3 C butter
- 1 ½ tsp. corn syrup
- 1 tsp. cinnamon
- ½ tsp. chili powder
Place all ingredients in a small saucepan. Stir over low heat until butter is melted and combined. Pour over cake(s). For extra spice, sprinkle with chili powder.
