RN74’s tasting menu for November highlights comfort foods so appealing this time of year when the Pacific Northwest hunkers down for a damp winter. Chef Seis’ hearty collection of dishes are sure to warm heart to toe, from the New England clam chowder with bits of bacon and house-made oyster crackers to the buttermilk fried chicken with braised brassica and house-made biscuits. Add to that, the Maine lobster pot pie, the daube of beef served with pomme puree and grand mere garnish and a rich red velvet cake with candied walnuts and crème fraiche sorbet for dessert and you have twists on home-style fare with a French accent.
Also on the menu for November is the Hometown Heroes’ selection from Waters winery in Walla Walla. Waters is an artisanal boutique winery founded in 2005 and based on the indelible belief that the Walla Walla Valley terroir is capable of producing distinctive red wines that rival the finest of the Old and New World regions alike. Waters produces just a few thousand cases of small lot bottlings each year, aimed at reflecting an underlying sense of time and place, and enhancing the food and wine experience. Its cellar includes varietals, both elegant and balanced, from Syrah and Cabernet Sauvignon to blends. Waters wines have been recognized among Washington’s top bottles by Wine Spectator, Seattle Met magazine and Wine Advocate, among others.
Winemaker Jamie Brown oversees the development of Waters three estate vineyards. Waters unique single vineyard Syrahs are a testament to Brown’s appreciation for the unique expression each vineyard and vintage bestows. Of the three distinct estate vineyards, Forgotten Hills is the most challenging to farm, only yielding ripe fruit every other year, at best. Forgotten Hills Syrah is arguable Washington’s most underestimated Syrah and the 2007 vintage Syrah will be available at RN74 in November, while the tiny allotment lasts.
