This vegetable quiche recipe calls for fresh feta, asparagus, and arugula from your local farmer’s market. You can easily replace them with whatever is in season, and local to your area.
2 Sparrows Farmer’s Market Quiche Recipe
Yield: 1 quiche large enough to feed 8-10 people (depending on how big the slices are cut)
- 1 x 10” spring form pan (3” deep)
- Stand Mixer
- Large Bowl and whisk
- Aluminum Foil
Quiche Dough Ingredients:
- 750 g All Purpose Flour
- 10 g Salt
- 10 g Sugar (granulated)
- 1 lb Unsalted Butter (cut into small cubes, kept cold)
- 1 Cup Ice Water
Quiche Custard Ingredients:
- 12 ea Eggs
- 24 oz Heavy Cream
- 24 oz Whole Milk
- 1 t Salt
- 1 t Black Pepper (ground)
1. Mix all ingredients together in a large bowl with a whisk.
2. Keep cold until ready to use.
- 1/2 lb Grilled Asparagus (cut into 1” pcs)
- 2 cups Fresh Arugula
- ¾ cup Feta Cheese (crumbled)
1. Place flour, salt and sugar into the stand mixer with the paddle attachment. Mix on low.
2. Add the butter into the dry ingredients and mix for 30 seconds.
3. Take the ice out of the water. While the mixer is running on low, slowly pour the water into the dry ingredients until all the mixture has come together. All of the water may not be needed.
4. Turn the mixer up to medium and mix for 15 seconds.
5. Take the dough out of the mixer and place it on a lightly floured surface. Kneed the ball of dough until it is one solid piece.
6. With a rolling pin, roll the dough out to 1/4” thick. Try to keep the dough in a circle shape and make sure that it is large enough to put in the quiche pan.
7. Once it is rolled out, place the dough in the spring form pan and press it to the sides and the bottom of the pan. Make sure not to stretch the dough to thin or poke holes in it. Trim the top of the dough even with the top of the pan and use any scraps to fill in holes that were made.
8. Place the quiche shell in the freezer until frozen.
1. Remove the quiche shell from the freezer.
2. Place all ingredients into the shell.
3. Gently pour the quiche custard into the shell until it is about ¾” from the top of the dough. Do not over fill or it will over flow during baking.
4. Cover the top of the quiche with aluminum foil. When doing this, pinch the center of the foil and create a “tent” with the foil so that it is raised in the center and will not touch the custard as it rises.
5. Place the quiche on a cookie tray, with a rim, and bake it in a 375 degree oven for about 2 hours.
6. To check for doneness, gently shake the quiche. The center of the quiche should only move a little bit. If it jiggles too much, put it back in the oven, uncovered, and check it every 5-10 minutes.
7. Once finished. Let cool for 30 minutes, then it can be removed from the pan, cut and served.
8. Serve with spring garden greens like baby lettuces, frisee, arugula, and a light mustard, lemon and olive oil vinaigrette. Enjoy!
