Vegan Berry Chia Granola Overnight Oats

Makes 2 servings
INGREDIENTS
- 1 cup rolled oats, divided in half
- 1/4 cup chia seeds
- 1 cup almond milk
- 1/8 tsp cinnamon
- pinch sea salt
- 1 tbs maple syrup
- 1 cup fresh blackberries
- 1 tbs flax seeds
- Chopped, toasted nuts, optional
- Additional maple syrup
DIRECTIONS
Place half of the oats, chia seeds, almond milk, salt, and cinnamon in a non-metallic jar with a lid. Refrigerate overnight.
Make the Granola: In a small bowl, mix the flax seeds and ½ cup of the remaining oats with the maple syrup. Spread on a small pan lined with parchment paper and toast for 5 minutes.
In the morning, take the oats out of the frig, top with granola, berries, nuts (if desired) and remaining maple syrup. Stir, and enjoy!
