Oats are full of a fiber called beta glucan, which is linked to lowering cholesterol levels and overall heart-health, as well as fighting cancer and other diseases as we age. Oats also contain protein, magnesium, manganese, and selenium, which can help when fighting stress. Add in antioxidants from fresh blackberries or blueberries, as well chia seeds to keep you full, and you’ve got one winner of a breakfast with this vegan overnight oats recipe!
Vegan Berry Chia Granola Overnight Oats

Makes 2 servings
- 1 cup rolled oats, divided in half
- 1/4 cup chia seeds
- 1 cup almond milk
- 1/8 tsp cinnamon
- pinch sea salt
- 1 tbs maple syrup
- 1 cup fresh blackberries
- 1 tbs flax seeds
- Chopped, toasted nuts, optional
- Additional maple syrup
Place half of the oats, chia seeds, almond milk, salt, and cinnamon in a non-metallic jar with a lid. Refrigerate overnight.
Make the Granola: In a small bowl, mix the flax seeds and ½ cup of the remaining oats with the maple syrup. Spread on a small pan lined with parchment paper and toast for 5 minutes.
In the morning, take the oats out of the frig, top with granola, berries, nuts (if desired) and remaining maple syrup. Stir, and enjoy!
