Homemade Tilapia Tacos

Ingredients
- 1pkg. (6 oz.) Fresh Take Southwest Three Cheese Recipe Cheese Breadcrumb Mix
- 6 fresh tilapia fillets (1-1/2 lb.)
- 2cups shredded purple cabbage
- ½ cup pineapple salsa
- 12 corn tortillas (6 inch), warmed
Directions
Heat oven to 375ºF. Spray baking sheet with cooking spray. Open breadcrumb bag; pull apart center seal. Mix contents together.
Moisten fish with water; place in bag, 1 piece at a time. Lightly press cheese mixture onto both sides of fish. (Fish will not be completely coated.) Place on prepared baking sheet; top with remaining cheese mixture. Bake for 12 to 15 min. or until fish flakes easily with fork.
Meanwhile, combine cabbage and salsa. Cut fish fillets in half; place on tortillas. Top with cabbage mixture.
Tip: Prepare using your favorite fruit salsa, such as peach or lime.
Crispy Chicken Tacos with Mango-Chipotle Slaw

Ingredients
- 1pkg. (6 oz.) Fresh Take Spicy Chipotle Cheddar Breadcrumb Mix
- 1-1/2lb. fresh chicken tenders
- 3 cups coleslaw blend (cabbage slaw mix)
- 1/3cup Kraft Mango Chipotle Vinaigrette Dressing
- 12 corn tortillas (6 inch), warmed
- 1 mango, julienne cut (matchsticks)
Directions
Heat the oven to 375ºF. Spray baking sheet with cooking spray. Open breadcrumb bag; pull apart center seal. Mix contents together.

- 1 small avocado, chopped
- 2cups cherry tomatoes, halved
- 1/2cup chopped red onions
- 1 Tbsp. chopped fresh cilantro
Directions
Heat oven to 375ºF. Coat the chicken with breadcrumb as directed on package; place on baking sheet sprayed with cooking spray. Bake 25 min. or until chicken is done (165ºF).
Meanwhile, combine remaining ingredients. Serve chicken with salsa.
Tip: Serve with lime wedges for an adding zing of flavor.
Spicy Chicken-Chipotle Salad

- 1-1/2lb. boneless skinless chicken breast halves
- 1pkg. (6 oz.) Fresh Take Spicy Chipotle Cheddar Breadcrumb Mix, mixed together
- 1pkg. (10 oz.) torn mixed salad greens
- 1-1/2cups tortilla chips (2 oz.), coarsely crushed red pepper, chopped
- 1 cup canned black beans, rinsed
- 1 can (7 oz.) corn, drained
- 1/4cup sliced red onions
- 1/2cup Kraft Mango Chipotle Vinaigrette Dressing

Heat the oven to 375°F. Coat chicken with cheese mixture and bake as directed on package; cut into 1/2-inch pieces. Toss salad greens with remaining ingredients in large bowl. Top with chicken.

- 1 stalk celery, finely chopped
- 2 Tbsp. water
- 8 slider buns
- 8 lettuce leaves
- 3 Tbsp. Sour Cream
- 1/2 avocado, thinly sliced
Directions:
Mash beans with fork in medium bowl. Add cheese mixture, celery and water; mix well. Shape into 8 (1/2-inch-thick) patties. Heat large skillet sprayed with cooking spray on medium-high heat. Add patties; cook 5 min. on each side or until heated through (160ºF).
Fill buns with lettuce, burgers, sour cream and avocados.
Tips: Substitute 4 green onions for the celery.
