The Sparkling Fox
This “pitcher perfect” recipe that will impress even your most experienced bartender friends!
Ingredients
- 1 750-ml bottle Tussock Jumper Prosecco, chilled
- 4 oz Cointreau
- 12 oz freshly squeezed lime juice
- 8 oz Tequila Blanco, or to taste
- 4 oz simple syrup
- 6 lime wheels for garnish
- Coarse salt
Directions:
Mix the lime juice, tequila, Cointreau and simple syrup in apitcher. Stir if you prefer it on the rocks, pour into a blender with ice for frozen. Pour the salt on a small plate. Moisten the rim of your glass with lime, and dip the glass in the salt. Fill the glasses with ice (if rocks), then fill them 1/2 full with the tequila mixture. Top glasses with Tussock Jumper Prosecco, garnish with lime wheels, serve.
Mango Margarita Sorbet
Mango Puree:
- 2 cups Simple Syrup (page 16)
- 3 cups Fresh Mango, diced
Sorbet:
- 4 cups Mango Puree
- 1 cup Altos Tequila Reposado
- 1 cup Filtered Water
- 1 tablespoon Lime Juice
Makes about 2 quarts
Make the Puree:
Puree diced mango in blender or food processor until smooth. Set aside. In a large mixing bowl, combine mango and simple syrup and stir.
Make the Sorbet:
Stir in tequila, lime juice and filtered water into bowl with mango puree. Cover the bowl with plastic wrap and refrigerate for 1 to 2 hours.
Freeze the mixture in your ice cream maker according to the manufacturer’s instructions.
Transfer the sorbet into freezer-safe container and freeze for at least 8 hours before serving.
Serving Suggestion: Scoop into a salt or sugar-rimmed margarita glass and garnish with tropical fruit. For more fun add an extra shot of tequila on top!

Orange Jalapeno Margarita


Ingredients:
Makes 2
- 3 oz Silver tequila
- Juice of one tangerine
- 1.5 oz Lime Juice
- 1 oz Agave Nectar
- Splash of Cointreau
- 2-4 Jalapeno Slices
- 1 pinch fresh Cilantro
Garnish
- Smoked Paprika
- Cayenne Pepper
- Sea Salt
- Pinch of sugar
- Lime slice for rim
Rim directions:
Mix all garnish ingredients in a shallow bowl or plate. Wipe the lime slice around the rim of the glass, set aside.
Drink directions:
Shake all ingredients with ice, and strain into a margarita glass. May also be blended. Garnish with a lime or jalapeno slice.
