This year we celebrate August 15th as National Lemon Meringue Pie Day. Lemon puddings and pies have been around since well before the Mayflower sailed it’s way over to the U.S. of A., and always included fresh, local ingredients like eggs and lemons.
Although we’re not entirely sure who makes up these food-filled holidays, we were able to find a couple cocktail recipes that represented this delicious, sweet tart dessert, in liquid form.
Lemon Meringue Pie Martini
- 1.5oz citrus vodka
- .75oz Pallini limoncello
- .5oz white creme de cacao
Shake w/ ice, and strain into a chilled martini glass. Garnish with a lemon twist.

Lemon Meringue Pie Cocktail
- 2 oz vanilla vodka (e.g., Absolut, Stoli, Three Olives)
- 1 oz Pallini Limoncello
- Squeeze of fresh lemon juice from 1/4 lemon wedge
- Splash of simple syrup
- 1 meringue cookie for garnish
- Lemon zest for garnish
Chill a martini glass while you mix the drink. Fill a cocktail shaker with ice cubes. Pour the vanilla vodka, Limoncello, squeeze of fresh lemon juice and splash of simple syrup into the shaker. Shake vigorously to combine and chill. Strain into your chilled martini glass. Top the drink with one meringue cookie. Top the meringue cookie with lemon zest. It should look like a pie topped with a dollop of meringue. Enjoy!
