Here’s a delicious recipe for Oatmeal Apple Cookies that you don’t have to feel guilty about. There is no refined white flour or sugar in here, and the oats and dried apples pack plenty of powerful nutrients. Did you know oats can lower cholesterol levels, reduce chances of cardiovascular disease, and stabilize your blood sugar? Dried apples are full of antioxidants and are linked to improved lung function. The recipe is pretty basic. I’ve taken a traditional oatmeal cookie recipe and made a few healthy modifications. It turned out to be great. The whole family agrees!
Oatmeal Apple Cookies
Ingredients:
- 1 cup butter, softened
- 1 cup brown sugar, packed
- 1/2 cup honey
- 2 eggs
- 1 tsp vanilla extract
- 1-1/2 cups whole wheat flour
- 2 tsp ground cinnamon
- 1 tsp baking soda
- 1/4 tsp salt
- 3 cups old-fashioned oats
- 1/2 cup dried apples, chopped
Directions:
- Cream butter and sugars (including honey) until light and fluffy. Beat in eggs and vanilla. Gradually add flour, cinnamon, baking soda and salt. Stir in oats and dried apples.
- Drop rounded teaspoonfuls 2 inches apart on an ungreased cookie sheet. Bake at 350 degrees for about 10-12 minutes or until golden brown. Let stand for a minute or two before transferring cookies to a wire rack to cool. Yield: 4 dozen cookies
