Garlic Sage Potato Wedges

Ingredients:
1 lb yukon gold potatoes
5 garlic cloves, thinly sliced
5 sage leaves, chopped
2 sprigs of rosemary, chopped
2 tablespoons olive oil
Sea salt and freshly ground black pepper
Directions:
Put a baking sheet on the bottom oven rack and preheat to 400 degrees F.
Wash the potatoes and cut into wedges. Toss with olive oil, herbs, salt and pepper.
Spread on the hot baking sheet or and roast 20 minutes. Stir, then add garlic cloves; continue roasting until golden, about 20 minutes. Increase the temperature to 425 degrees F and cook until crisp, 10 more minutes. Season with additional salt and pepper as desired.
