Ingredients
- 1 2-3 lb flank steak
- 1 tbs chili powder
- 1 tbs cocoa
- 1 tbs smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp freshly ground black pepper
- 1/2 tsp sea salt
- 1 tbs olive oil
- Squeeze lemon juice
Directions:
Blend the spices, pepper, and salt together in a bowl, along with the olive oil and lemon juice. Gently use a metal grilling brush or dull knife to scruff up the surface of the meat, and rub the spice mixture liberally into the meat with your hands. Place the meat into a non-reactive platter, and cover. Wash your hands. Refrigerate for at least an hour, or overnight.
Allow the meat to come to room temperature before grilling. Grill steak over a medium-hot (lump charcoal) grill until done to the desired degree. You may also pan sear the meat for approximately 5-6 minutes per side on a grill pan for a medium rare steak.
Let rest for 5 minutes, pouring any cooked juices over steak. Slice on the bias, and serve.
