It may not be snowing in Chicago at the moment, but that’s fine with me. I’m looking forward to a green holiday – with libations, menu selections to please any foodie, and a restaurant design done right – at prasino, meaning “green” in Greek, in my hometown of Chicago.
Prasino has a gorgeous, inviting space and a contemporary American menu to match, highlighting varied and high quality farm to table ingredients. Are you ready to nosh? Simply choose from raw plates, sushi rolls, small plates, greens, flatbreads, sandwiches, small plates, or even big plates for the gourmand! They even cover vegan, vegetarian, and gluten free fare. Many of the creative, seasonal cocktails use organic ingredients and the selection of craft brews is inclusive. Wine selections are identified on the menu as being organic, sustainable, biodynamic, or charitable and of course food friendly. Keith Mallini, prasino’s General Manager and Wine Director, and I chatted over a glass of 2009 Judith Beck Zweigelt from Burgenland in Austria, a biodynamic wine with deliciously warm, black cherry and spice tastes and a lingering finish, which set the stage for our conversation. With years of restaurant experience, including positions as the General Manager of the Five Diamond restaurant at the Ritz Carlton, New Orleans and the Restaurant Director at Trump International Hotel and Tower in Chicago along with stints in Hawaii, Keith is passionate about food and wine – especially that which is organic. He loves being exposed to an incredible amount of quality wines as well and appreciates the craftsmanship of food and wine thanks to his experiences (and his Italian and Japanese grandmothers who loved to cook)! At prasino, Keith is thrilled that the beverage program matches their other programs of sustainability.
As a wine lover, I was more than happy that a tasting of organic wines offered by Candid Wines paired with appetizers was scheduled for the same evening I chatted with Keith – so naturally I remained at prasino, tasted some wonderful wines, and met a few new friends who share the same interests and appreciation for loving wine, food, and a restaurant designed with the environment in mind.
