It’s almost game time, do you have a meal plan?
Fear not, your fellow procrastinator is here to help. When push comes to shove, we have the perfect Super Bowl recipe for your big party plans.
All you need is jar of chunky peanut butter, some powdered sugar, some ground flax (which we know you’ve been sneaking into your smoothies and cereals anyhow), and some imagination. I’ll skip the chit-chat and cut right to the recipe on this one, as I realize it’s the day before/day of, and some of you may actually need to run out and buy some flax meal. It’s okay, we won’t judge. One note here, the gluten free here is coincidental, so I don’t want to hear any whining about how these would be better with your best buddy gluten. It wasn’t here to start. Also? These are intense, like game day. They’ll take no prisoners.
PB GF COD (Peanut Butter Gluten Free Cookies of Doom)
1 and 1/4 cup Chunky peanut butter
1/2 cup Powdered sugar
1 Tablespoon Ground flax meal PLUS 3 Tablespoons water. Set this aside for a few minutes, until gelled.
2 tsp Vanilla extract
Mix Ins
- Chocolate chips – this is mandatory in my house.
- Shredded coconut (Think Chicosticks)
- Melted chocolate for dipping or striping
- Potato chips
- Instant espresso powder (or finely ground coffee, essentially)
- Dried banana chips
- Black sesame seeds
- Consider a squirt (or 2) of Sriracha to a small portion of batter, it works!
Preheat your oven to 350° F
In a large bowl, mix your peanut butter and powdered sugar until there is no visible powdered sugar. This part is a bit of a work out, put your back into it!
Add your flax egg and vanilla, mix until incorporated. Add any mix ins here. This is a sticky dough, don’t be worried.
For small balls (about an inch), or if you’re feeling extra fancy, shape them into footballs (I don’t think you could actually form a sea hawk or a bronco, but feel free to impress me) and flatten slightly. Don’t worry, these don’t spread much at all. Bake them on a parchment lined cookie sheet for approximately 10-11 minutes.

Yes, I know it’s pretty much just peanut butter, but something magical happens with the addition of powdered sugar and flax that makes them acceptable cookies. They are intense, rich, and definitely not on the light side- which makes them perfect for the Super Bowl.
